Smoked Kingfish & Roast Outback Kangaroo
A tour for the Tastebuds!
All of our 4WD tours & cruises now include a sample tasting of local produce including Yellowtail Kingfish
& Kangaroo, served with a native herb sauce. Not intended as a meal but as a culinary insight into the area you
are touring.

Smoked Kingfish
Spencer Gulf 'Smoked Yellowtail Kingfish' is a local delicacy.The
Kingfish is initially sourced from Cleanseas Aquaculture Growout in Port Lincoln. The Kingfish is then Brined for 2 hours in a salt water solution.
The Kingfish is then drained and hung on rods and on a rack in our
cool room to dry out overnight. The temperature of the
smoke box is gradually increase during the cooking process until the fish is cooked which can take between 3-4
hours depending on the thickness of the fish. The fish
is then taken out of the smoke box and put straight into the cool room to cool down and stop the cooking
process.

Roast Kangaroo
Served cold the Kangaroo is a must taste. The Kangaroo come from the surrounding Flinders Ranges & Outback.
Selected prime cuts of meat are marinated then slow roasted.
Native Herb Sauce
To compliment the meat we use a selection of sauces & relishes made from naitive bush foods. Such as
Quondongs, Kutjera, Native Peppers, Wattle Seed & Lemon Mrytle.
