The free range native pasture predominately of salt bush gives an herbaceous flavour & the
clean spring water of the Flinders Ranges helps to cleanse the animal. The sheep is free range grazed on this
pasture for a minimum of 400 days for maximum flavour absorption. Upon processing the carcass is allowed to age for
7 days to enhance tenderness before being divided into the various cuts of meat to be used in our cuisine
(including our own sausages).
